originally from claremorris, went to mount st michael, 1984-1990
Trained in Killybegs Catering College as chef from 1990-1992.
I was placed in Dromoland Castle for my 1st year, and returned back for my 2yr placement and stayed ther until 1997, we recieved a mitchlin star in 1994 which we chefs were very proud of.I went from there to further my pastry qualifications and started a 1 day a week Advanced Pastry Course for Teaching in Galway for 2 years in 1994-1995 where i recieved my diploma 706/3 for teaching pastry.
In 1997 i moved to Ashford Castle as Head Pastry Chef and stayed for a further couple of years.
