While some people are satisfied with the grain-fed, CAFO raised, industrial meat that is passed off as beef in much of our restaurants and grocery stores, there is a growing demand for something different. In the past, that "something different" might have taken the form of tracking down a local farmer to arrange for the purchase of a "cow share", a whole, half, or quarter steer that required significant freezer space and a big investment. While this, or better yet, growing your own, likely represents the gold standard for grass-fed beef acquisition, many people don't live in agricultural areas, so access is limited.
