BEAT KITCHEN FRIED CHICKEN 1/4 c. fat 1 1/2 to 3 lb. chicken, cut up 1 c. flour 2 tsp. salt 1/4 tsp. pepper 1/4 tsp. paprika 2 tbsp. parsley flakes Preheat oven to 200 degrees. Melt the fat in a shallow pan in the oven. Meanwhile, wash and dry that chicken. Place the flour and seasonings in a paper sack - you know the sort you might hide a bottle of Captain Morgan in. Drop 2 to 3 pieces of chicken in at a time and shake em' up good until coated. Place that chicken in the baking pan, skin side down bitches. Bake 30 minutes. Turn skin side up and bake for 30 more minutes. Serve hot with creamy pan gravy and potatoes. Makes 3 to 4 servings. Remember, the ninth secret spice is SALT.
